Our winery is a  thirty minute drive from Paphos in the Kilinia village, an unpopulated countryside, and is surrounded by vineyards. As with most villages in Paphos, Kilinia boasts a fine old history with vines having been planted several decades back. Our cava boasts five labels of ordinary wine and three wines which are the flagships of the winery.

Our winery has recently completed its extension works and is equipped with modern equipment for winemaking. We open our doors to visitors on almost a daily basis.

The area is suitable for the indigenous grape varieties, thus the white grape variety used is Xinisteri for a crispy dry with strong fruit aromas of citrus and banana, and, for a fruitier wine the medium dry.

The red grape varieties are a blend of both indigenous and imported grape varieties. The smooth Shoufas red is made from Maratheftiko Mavro and Cabernet Sauvignon grapes. The same grapes are used for our medium dry red with much fruitier character for wine drinkers who like to taste a tinge of sugar in their wine glasses.

The aromatic rosé is made by red grape varieties, mainly by the Grenache Noir and Ofthalmo grapes.

We produce red premium wines Maratheftiko & Cabernet Sauvignon / Merlot and white premium wine Chardonnay, a fabulous concentration of rich buttery fruit flavours.

History

The art of wine making started many decades ago by our grandfather Christodoulos Antoniou, with a nick name SHOUFAS, which means eagle.

He served as field watchman, he was famous for his innovative methods and his honesty and bravery.

Our father, Constantis Philippou, the son in law, took over and continued the wine making tradition. He expanded the vine yards in areas where only the goat could reached.

The wine produced was only for home consumption, used at family gatherings and celebrations. The wine was kept on old huge clay pots.

In 1999 we bought our neightbour's house and we built our winery based on the latest technology and wine making process. In 2000 we started trading our first commercially bottled wine with two types Shoufas Red Dry and Shoufas Dry White. The success of these first two wines lead us to increase our labels and to expand our winery.
